Laboratory Equipment

  • 1 Cocktail shaker if available
  • 1 Large wine or cocktail glass
  • 1 Bar Spoon

The Formula

  • 100 ml Sparkling wine
  • 50 ml Pineapple soda
  • 30 ml Ouzo
  • 1/4 Squeezed lemon
  • 1 tsp Honey
  • 1 scoop Ice

Experimental Procedure

  • Add honey, ouzo, lemon juice and ice to shaker and shake for about 10 seconds.
  • Add ice to your wine glass, and pour contents of shaker over the ice.
  • Add sparkling wine and soda and stir gently, then serve.

Scientist’s Notes

Add extra honey and pineapple soda to taste. Try with Yuzu soda for a more lemony kick.

RESULTS & VERDICT

WHAT WORKED

The honey and pineapple worked great with the sparkling wine. The Ouzo gave a very interesting and unexpected twist! If you don’t stir after adding the pineapple soda, you get a false sense of security and protection from the Ouzo punch!

WHAT WE WOULD CHANGE

Shake without ice initially to ensure the honey fully dissolves. Use a larger glass to fit all ingredients comfortably. Try with a little more honey and pineapple soda to help balance the citrus.

FINAL VERDICT

A refreshing, sparkling beverage with a strong slap of aniseed. Would make again with extra honey and/or soda to improve the balance with the citrus.
