LABORATORY OBSERVATIONS

APPEARANCE

Rich red, with bits and pieces of citrus.

AROMA

Citrus & cherry.

FLAVOUR

Delicious, warming “tea” with cherry and citrus notes. It almost feels like a health drink – like a hot toddy.

BALANCE & MOUTHFEEL

Warm, balanced, delicious.

RESULTS & VERDICT

WHAT WORKED

The honey was a later addition in the experiment stage, which really balanced out the initial sour flavour. We loved the treat of having a hot styled drink for a change, especially on a cold winter’s day. The Cherry Brandy really gave a wonderful flavour.

WHAT WE WOULD CHANGE

Not sure, maybe more honey. Otherwise it was very well balanced. We also tried a version with Ginger Wine added, but the drink was not improved by it – better with the strong cherry notes.

FINAL VERDICT

This is a delicious, rebellious take on a Hot Toddy, enjoyed best by wine rebels on a cold winter’s day.

PERMITTED MUTATIONS

AUTHORISED VARIATIONS

Other citrus. Other varieties of white wine. Simple syrup, agave, sugar or sugar-free sweeteners in place of honey.
