Laboratory Equipment

  • 1 Large wine or cocktail glass
  • 1 Shaker
  • 1 Shot measure
  • 1 Measuring beaker or jug
  • 1 Bar Spoon

The Formula

  • 100 ml Red wine
  • 30 ml Coconut Tequila
  • 15 ml Creme de Cassis
  • 100 ml Coconut yoghurt
  • Large squirt Agave syrup
  • 50 ml Lemonade
  • 1 Garnish (e.g. strawberry)

Experimental Procedure

  • Measure out red wine, tequila, liqueur, yoghurt and agave syrup and add to the shaker with ice.
  • Shake until cold, then add pour into the glass.
  • Top with lemonade and gently stir.
  • Add a garnish to the side of the glass and serve.

Scientist’s Notes

This Pina Colada style wine cocktail we were going to call a “Black Colada”, but after adding the yoghurt it turned a mauve-pink colour. It was well balanced and creamy, but feel free to adjust the sweetness to taste with the agave syrup. 

LABORATORY OBSERVATIONS

APPEARANCE

Pink-mauve in colour with a creamy texture, and the lemonade bubbles create a pattern as they try to move up through the creaminess.

AROMA

Lovely coconut aroma with soft hint of berries.

FLAVOUR

Creamy coconut and berry flavour with a great balance of sweetness and cream.

BALANCE & MOUTHFEEL

Very smooth, cool and creamy.

RESULTS & VERDICT

WHAT WORKED

The coconut yoghurt was a great choice because the red wine and lemonade would likely make normal cream curdle. The coconut tequila also added an extra layer of coconut flavour, and the agave syrup balanced out the tannins in the red wine.

WHAT WE WOULD CHANGE

Adjust the agave syrup for sweetness level of your liking.

FINAL VERDICT

A smooth and creamy cocktail that is a little bit special, and a great option to impress your wine and/or cocktail loving friends! A great balance of creamy and sweet.
