Laboratory Equipment

  • 1 Muddler (you can also use a fork)
  • 1 Shaker optional
  • 1 Hawthorne Strainer or other (for straining out the banana pulp)
  • 1 Champagne flute or fancy cocktail glass

The Formula

  • 100 ml White wine
  • 30 ml Vodka
  • 1/2 Ripe banana
  • 1 scoop Ice
  • 50-100 ml Lemonade
  • 1 swirl Whipped cream

Experimental Procedure

  • Smoosh the banana together with the vodka and white wine to release the flavour of the fruit.
  • Add ice, and shake in your shaker (if available).
  • Strain into your glass.
  • Top with lemonade and stir.
  • Add a swirl of whipped cream to the top for presentation.
  • Serve and enjoy!

Scientist’s Notes

We used sweetened whipped cream which worked well. If you don’t have sweetened cream, you may like to add a little sweetener to the liquid, or a dusting of icing sugar on top of the cream. 

LABORATORY OBSERVATIONS

APPEARANCE

Light lemony colour with slight haziness from the fruit.

AROMA

Strong banana with a hint of lemon.

FLAVOUR

Delicious! A soft and creamy banana flavour.

BALANCE & MOUTHFEEL

The banana and cream added a soft smoothness.

RESULTS & VERDICT

WHAT WORKED

Everything! The banana and cream smoothed out the white wine, the lemonade add a lovely balance of sweetness without taking over the banana flavour, and the sweetened whipped cream on top teamed perfectly with all the flavours, adding a decadence to this beverage.

WHAT WE WOULD CHANGE

Nothing.

FINAL VERDICT

We will absolutely be making this combination again – this experiment is a stayer, and ready for enjoyment by other willing rebel researchers!

PERMITTED MUTATIONS

AUTHORISED VARIATIONS

If no sweetened whipped cream available, try dusting some icing sugar on top. If you prefer sweeter drinks, try adding more lemonade or agave or other simple syrup. Shave some chocolate, cinnamon or nutmeg on top of the cream.
